I already told you man, Blind Guardian. Look for Nightfall in Middle Earth. And they're German, which fits your criteria... though I don't really get what you have against Norse/Swedish metal. Honestly, those are two of the finest metal countries on the planet.

Symphony X might also be the sort of thing you're looking for... or maybe Hammerfall.

Currently listening to weirdo atmospheric metal stuff. Neurosis, Tiamat, Psychotic Waltz among others.

first off I've got nothing against them, like there metal and their one of the few countries who's dance music I can tolerate (althought their country tunes kinda make me want to smash CD's)

It's just that all the fantasy metal bands i know are from there and I was looking for others, you know. I might be missing out on some good music and I wouldn't even know it

Hmm... where to begin...

Well I'll start off by recommending Dream Theater. That's what got me into metal really (well technically it was Fuseboxx, local band with very heavy DT influences). If you like your music fast and quirky then this is your thing.

Similar bands include:
Symphony X
Psychotic Waltz
Queensryche
Sonata Arctica
Dragonforce

If you're looking for something... crunchier, so to speak, try looking for some solid Death Metal stuff. Exhumed, Cannibal Corpse, Suffocation, Cryptopsy, etc. If you'd like to hear cookie monster growly death metal vocals coupled with some melodic instrumentation, try listening to Opeth.

If you like falsetto female voices and/or orchestral instrumentation with your music then you might like some Goth. Within Temptation, Lacuna Coil, Nightwish, and Virgin Black are some very good goth metal acts.

Other than that, I suppose I can only recommend various other rock bands. A Perfect Circle, Audioslave, Soundgarden, Stone Temple Pilots, etc. and of course classic rock acts like Led Zeppelin, Pink Floyd, etc.
